I’m on the road all week long this week. So much so that I’m publishing this post a day late. But better late than never. This week’s travel meal plan will consist of very simple meals, all containing similar ingredients. Some meals will even be repeated to save on food waste.

- Thursday Dinner: Cheesy Ranch Potatoes
- Friday Lunch: Leftover potatoes
- Friday Dinner: Egg Salad Sandwich & Salad
- Saturday Lunch: Restaurant with friends
- Saturday Dinner: Rice & Stir Fried Vegetables
